So far EVERY week we have recieved Swiss Chard in our CSA share. I try to do a different recipe with it each week. This was a family favorite. The original recipe called for spinach, but I think Swiss Chard or Kale would/does work great!
3 c. fresh spinach ( I used one large bunch of Swiss Chard)
1 onion, finely chopped
5-6 cloves garlic, minced or pressed
A handful of fresh mushrooms, chopped
4 oz. feta cheese, crumbled
Salt and pepper to taste
Bring a large pot of salted water to boil and add pasta. Cook according to package directions. In the meantime, heat a little olive oil in a skillet over medium heat. Add onions, garlic, and mushrooms and cook until tender. Add spinach and cook until wilted. Add tomatoes, heat through, and then add drained pasta and crumbled feta. Add salt and pepper to taste. Heat through and serve; you can crumble a little extra feta on top if you feel the urge.
My daughter’s names are Abby and Olivia and together you get Ablivia. And trust me most days I wonder how they really can be so oblivious! I am starting this blog b/c my friends thought I should and I thought it would be a great way to share ideas, fun websites and pictures! Nobody really cares what I am doing on a day to day basis (heck I bore myself), well maybe my mom will at least read.
